rice paper rolls with avocado and sun-dried tomato

16 pieces rice paper

1 whole avocado
16 halves sun-dried tomato
or equivalent
16 sprigs cilantro
or more if you love cilantro
4 whole green onions
cut into 1-inch pieces
salt
Tabasco

We often make this recipe when avocados are in season. These rice paper rolls were a smashing success with the kids in our family cooking classes!

Prep filling by slicing the avocado into 16 wedges, draining the sun-dried tomatoes, cutting the green onions into 3-inch pieces, and cleaning and trimming the cilantro.

Soften the rice paper in a large bowl of water.

Add a wedge of avocado, a sun-dried tomato half, a sprig of cilantro, and a few pieces of green onion.

Top with some salt and Tabasco.

Fold in the rice paper by bringing in the left and right sides, then roll into a cylinder from the bottom.

If you have a lot of clean surface area, you can assemble the rolls in batches. Soften a batch of rice paper, lay them all out, then add fillings, and roll them up.
