Caipirinha

Caipirinha

2 whole limes
2 tbsp superfine sugar
1/2 cup cachaça
1/2 cup crushed ice

Following on the tails of the mojito, the caipirinha is the next hot tropical cocktail.

Cachaça is a Brazilian liquor made from distilled sugarcane juice; it's similar to rum which is distilled from molasses but has a distinct flavor.

Trim the ends off the limes and halve them lengthwise. Slice each half into 6-8 thin slivers and place the lime slivers, skin side down, in the bottom of a large pitcher. (alternatively, drinks can be prepared one at a time in a rocks glass).

Add the sugar to the limes and muddle with a wooden spoon until the sugar is dissolved and the juice is extracted.

Add the cachaça and the ice to the pitcher and stir everything together for about 10 seconds.

Pour into glasses, including lime wedges and ice chunks and serve.
notes
For a tropical variation: After muddling the lime and sugar together, add one-half of a diced mango and one half of a kiwi to the pitcher. Muddle everything together before adding the cachaça and ice and proceed as before.
