Italian Sausage Soup

Italian Sausage Soup
ingredients
all
1 tbsp olive oil
1 1/2 cups bell pepper
chopped
3 cloves garlic
crushed & minced
1 lb Italian sausage
removed from casings & formed into small meatballs
6 cups chicken broth
28 oz diced tomatoes
preferably stewed with garlic and onion
1 tsp Italian seasonings
14 oz cannellini beans
2 whole carrots
peeled & roll cut into pieces
1 cup elbow macaroni
or small shells
salt
pepper
bread

Saute garlic, onions, bell pepper until wilted.

Add Italian sausage & sauté until cooked.

Add broth, tomatoes, & Italian seasoning.

Heat to boiling & simmer for about 30 minutes.

Add cannellini beans as well as carrots, macaroni or pasta & cook until al dente.

Add salt & pepper to taste. Serve with a crusty bread for a hearty meal.
