Grandmom Trigiani's Baked Zucchini

1 whole medium onion
chopped
2 cloves garlic
minced
1/2 cup olive oil
3 cups zucchini
sliced thin in rounds
1/2 cup Parmigiano-Reggiano
grated
4 whole eggs
slightly beaten
4 tsp fresh Italian parsley
chopped

Preheat the oven to 350°F.

In a large skillet, brown the onion and garlic in the olive oil.

Layer the zucchini in a lightly greased baking dish, sprinkling some of the onion-garlic mixture and some of the cheese over each layer.

Pour the eggs over the zucchini, making sure to cover the zucchini completely. Sprinkle the parsley over the top.

Bake for 40 minutes, or until lightly browned on top.
