|Preheat the oven to 350°F.|
|In a large skillet, brown the onion and garlic in the olive oil.|
|Layer the zucchini in a lightly greased baking dish, sprinkling some of the onion-garlic mixture and some of the cheese over each layer.|
|Pour the eggs over the zucchini, making sure to cover the zucchini completely. Sprinkle the parsley over the top.|
|Bake for 40 minutes, or until lightly browned on top.|
