This veggie burger is so delicious and full of good-for-you ingredients. You'll want to set aside some time to enjoy preparations. It's not quick to put together, but they freeze well so you may even want to make a double batch for a quick meal later. After you try these you won't want to go back to the supermarket frozen variety.

The great thing about the cannelloni is that the crepes can be made ahead of time - filled and rolled. Wrap them in a Saran wrap so they are not touching and then put into a freezer bag to use when needed. I do not freeze the sauce because it gets watery. I have made them in advance when I am having 40 or 50 people over. Accompany these with a green salad. These are a hit!

Collin's family threw him a surprise 30th birthday party in San Francisco. Carm made dinner arrangements for a party of thirty at Chenery Park, a local restaurant within walking distance from their home. Collin entered the restaurant to a long table of 30 guests holding up their menus to hide their faces. The group then started to sing Happy Birthday. After a festive dinner, the afterparty was at Collin and Carm's house. Mr. Oguro put on a great show of storytelling and karaoke for the guests. This salmon was one of the dishes that the guests enjoyed at Chenery Park that night.

Chicken tikka masala is one of our favorite dishes to order at an Indian restaurant. With all the cream involved, it probably isn't the leanest option on the menu, but the sauce sure is delicious! This recipe yields a lot of food, so invite people over to share or get ready to eat it for a few days in a row. We sometimes serve this with

We are huge fans of Beretta's eggplant caponata, so we were excited to find this recipe in Cook's Illustrated. This recipe takes about an hour for one person to cook, but the it lasts for a week in an airtight container in the fridge, so you can enjoy it for a few days.

Collin took Carm to his family's beach house near San Luis Obispo for their one month anniversary. Collin and Carm saw The Slackers, one of Collin's favorite ska bands, and ate dinner at Rosa's. That night, Carm tried crème brûlée for the first time. Collin gave Carm the honor of cracking the crunchy top layer.

While there are a ton of ingredients in this recipe, the flavors and textures of the enchiladas are super solid! This dish is super satisfying. Heads up ... there are several different steps, so budget your time accordingly, or prep components like the sauce and filling in advance. We appreciate that the 12-inch nonstick skillet does triple duty in this recipe as it minimizes the cleanup effort. Brace yourself... even though Jacques Pepin (JP) makes it look really easy, procuring and cooking this set of recipes is really a small project. Although we had to go to research morel mushroom prices and go to different stores to get the rabbit, horseradish, and morels, this small project was well worth the effort. The original Jacques Pepin recipe yields 4 servings of stew and saddle steak. I rewrote the recipe since we decided to spread the meals out over a few days since we are just a household of 2. We brought a batch of frozen lumpia with us on the plane to LA for the Christmas holiday and fried it up right before the family party started. The lumpia was gone in 10 minutes. :) Lumpia is a popular Filipino party appetizer. Because lumpia takes a lot of work to prepare, but because it also freezes well, it is often prepared in bulk. Spelt Pizza Dough
Pizza night is a great way to use up all the leftovers at the end of the week and it’s just a really fun meal everyone loves. Make most of the pizzas vegan, but you can make a few with organic dairy cheese as well. Use tomato sauce, pesto, caramelized onions and infused olive oil for the sauces. Include lots of veggies. Try topping a hot pizza with an amazing tossed salad like arugula or shredded romaine (on a Mexican style pizza) This dough recipe works out great for FD programs. It makes 20 - 12in. crusts. Fire up a grill to pre-bake the crusts. It’s a straight mix method, and it’s best to make it the night before to allow it to have a slow ferment in the fridge overnight. This will develop a good flavor , a nice network of bubbles and allow the dough to relax so it’s easy to roll out.
